Summer Salads
I can easily get bored of salads unless they are filled with various *extras*. A simple romaine lettuce with dressing and shredded carrots gets old really quick, but add a handful of other nutritious and flavorful toppings like avocado, tomatoes, and peppers and it suddenly feels upgraded and will definitely be more filling in the end.
One of my favorite summer salads is a Caprese Salad. I shared the recipe on Instagram (click here!). Beyond that, I really like starting with some of the mixed bags of salads are various grocery stores. Trader Joes, Harris Teeter and Costco all have really fresh and delicious chopped salad mixes that only need a few extras to make it a hearty lunch. Avocado is my go to when I need to add a bit of fat, but I also love grilled or shredded chicken too!
